I make a lot of chicken around here. Like, a lot. And I used to buy packets of dry spice mixes for marinades, and while I loved them, they were just too expensive. So, I started playing around with making my own. For a while, I didn't measure, and I'm pretty confident that we can all make our own meat marinades without measuring; but if you're looking for something to try tonight, here's one iteration that's a toddler/husband/mama favorite.
Ingredients:
- 1 Tbsp. sugar
- 1 Tbsp. salt
- 1 tsp. granulated garlic
- 1 tsp. chipotle powder
- 1 tsp. chili powder
- 1/2 tsp. onion powder
- 1/3 C water
- 1/3C olive oil
What to do:
- Whisk all ingredients in a bowl. Throw in chicken (we prefer thighs). Let marinate in fridge for 30 minutes or more.
- Grill. I personally like our outdoor grill ... About 7-8 minutes a side for thighs.
